The gap nobody reports
Two numbers describe the same week and rarely agree: what the recipes and the sales say should have left the store, and what the count says actually left it. The difference is over-portioning, waste and theft — and most kitchens never see it as a figure.
Stock moves when the bill settles
The till depletes stock in real time against the recipe as each bill is settled, rather than importing a day of sales overnight. Variance is therefore answerable during service instead of the following week, and the same settle issues the eTIMS receipt.
The ledger cannot be edited
Append-only is enforced by a database trigger rather than by application convention. Code that tries to rewrite a movement is rejected by the database, so the guarantee survives a future developer who has not read the rules.
Restaurants, bars, kitchens and lodges lose margin in a gap most reports never show: what the recipes and the sales say should have been used, against what the opening stock, the purchases and the closing count say actually was. AkibaPOS makes that gap the headline number, then gives managers item-level tools to recover it — supplier invoices and prices, bulk stocktakes and variance, recipes and menu items costed to a food-cost percentage, and wastage recorded where it happens.
Stock activity derives into a double-entry general ledger with a trial balance, a P&L and a balance sheet, and every report exports. The built-in till sells offline with tabs, cash, card and M-Pesa, eTIMS receipts and kitchen order tickets, depleting stock in real time rather than importing it at the end of the day. Currency, VAT rate, fiscalisation and phone format all resolve from a country pack, so Uganda, Tanzania and Rwanda follow Kenya without a fork.
